Other common pseudocereals include quinoa and amaranth. Buckwheat has become popular as a health food due to its high mineral and antioxidant content. Its benefits may include improved blood sugar control. Carbs are the main dietary component of buckwheat. Protein and various minerals and antioxidants are also present. The nutritional value of buckwheat is considerably higher than that of many other grains

Ingredients
  

  • 60 gram Salted Butter
  • 01 number Small onion peeled and chopped
  • Garlic clove peeled and Chopped
  • Fresh basil leaves
  • 50 gram Mushrooms washed and small Cubes
  • 15 gram Fresh Butternut Small Cubes of Butternut
  • 15 gram Fava Beans
  • half Cup Fresh creme
  • 200 gram buckwheat groats
  • 50 ml white wine
  • 02 cup Chicken stock or Vegetables Stocks
  • ground black pepper to taste
  • Salt to taste
  • Parmesan Cheese for topping

Instructions
 

  • Melt 2 tablespoons (30g) of butter in a large frying pan over medium heat and cook the onions, garlic, mushrooms and Butternut for about 10 minutes (until the mushrooms and butternut are fully cooked through).
  • Add the buckwheat groats and toast them for 2 minutes. Pour in the white wine, bring to a simmer and let evaporate for about 5 minutes (until half of the liquid is left). Slowly pour in the stock while stirring, in small additions, add Fava beans until the buckwheat is fully cooked (about 25 minutes).
  • Stir in the creme and add butter.
  • Salt to Taste.
  • For serving, add the buckwheat risotto onto each plate.Top with some shaved Parmesan and one or two leaves of Basil for decoration. Season to taste.
