Ingredients
  

  • 400 g mutton
  • 2 tbsp lemon juice fresh
  • 1 tbsp tamarind juice
  • 2/4 tbsp roasted curry powder
  • salt, or to taste
  • 1 tbsp ground black pepper
  • 2 tbsp mustard oil or refined oil
  • 1 red onion sliced
  • 4 green chili peppers,   halved lengthwise
  • 8 green cardamom pods,
  • 6 whole cloves
  • fresh ginger crushed or chopped
  • 1 (2 inch)  cinnamon stick, broken in half
  • 3 cloves  garlic, minced
  • 1/2 cup water
  • 50 g fresh tomato chopped
  • fresh coriander chopped

Instructions
 

  • Cut the mutton into bite-sized pieces. Combine the lemon, tamarind juice, 1/4 cup curry powder, salt, and pepper in a bowl. Add mutton and toss to coat.

  • Heat the mustard oil in a Kadhai or frying pan over medium heat. Cook the sliced onion, green chiles, cardamom pods, cloves, ginger, and cinnamon stick until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Stir in the garlic and cook for an additional minute.

  • Add chopped tomato cooked add mutton mixture, and water. Stir and simmer until the mutton is cooked through, about 20 minutes. Add the roasted curry powder and stir until evenly dispersed.

  • add coriander and simmer for 2-3 more minutes.

Notes

Tip  To roast your own curry powder, heat 3 tablespoons of curry powder in an ungreased skillet over medium heat, stirring frequently, until fragrant and slightly browned. Immediately transfer the spice to a bowl to cool.
